For those of you who have already experienced a night at Elephant Hills here’s a reminder of those delicious dishes our fabulous cook showed you how to prepare….good luck and happy cooking!

Thai green Papaya Salad (Som Tum)

  • 2 cups green papaya peeled and shredded (substitute: green hard mango or carrot).
  • 4 cloves garlic
  • 1-2 birds eye chilies
  • ½ cup long bean, cut into ½ to 1 inch lengths.
  • 2 tbsp dried shrimp, rinsed and dried
  • 1-2 tbsp Thai fish sauce
  • 1 tbsp lime juice
  • 1 tbsp tamarind water/juice
  • 1tbsp palm sugar
  • 1-2 cherry tomatoes, quartered
  • 2 tbsp crushed roasted peanuts

    Peel the papaya and rinse under running water, remove the seeds and shred the flesh with a grater and set aside. In the mortar and pestle add the garlic, chilies and beans, pound for just a minute. The add the papaya, dried shrimp, fish sauce, lime juice, palm sugar, tamarind water and tomatoes. Gently pound using a large spoon to mix as you pound until the palm sugar has melted. Put the ingredients on a serving plate then add the roasted peanuts on the top. Serve with cabbage wedges and sliced cucumber on the side.
Thai green Papaya Salad (Som Tum)
Note: You can leave out the papaya and combine everything else and use as a salad dressing over fresh cucumber and onions (onions optional).

Pad Thai

  • Thai noodle
  • Bean sprouts
  • Carrot
  • Soy sauce
  • Spring onion
  • Tofu
  • Salty radish
  • Peanut
  • Prawn
  • Butter
  • Egg
  • Garlic
  • Sugar
  • Tamarind sauce made from garlic ,shallot onion, peanut sugar and fish sauce

How to cook
Step 1: Take oil in the pan and add garlic, tofu and salty radish. Then add soy sauce, sugar and mix with Thai noodles, bean sprouts and carrot. Add water to make  the noodles soft. Then add spring onion as well.


Pad Thai
Step 2: We will change the pan to make an omelet using butter and egg.

Step 3:
Take the already fried pad thai noodles and warm for a few minutes. Place the fried pad Thai noodle in the middle of your omelet, then take the omelet cover the noodle as well as if wrapping a parcel. After that add peanut and tamarind sauce on top.

Step 4:
Serve with bbq Pork and vegetables.

Thai curry
Curry is a favorite dish in Thai restaurants throughout the world and for good reason. Based on a delicious paste of fresh and dried herbs and spices

dried whole red chilies, seeded and soaked , shallots, garlic , galangal, lemon grass, kaffir lime rind, fresh coriander root , coriander seed cumin, sea salt , shrimp paste

Preparation
Pound dried chilies and salt together, add galangal, lemon grass, kaffir lime rind, garlic, shallots and pound well. Add follow with shrimp paste. Pound until everything is well-combined.
After this the curry paste may be used to fry all types of meat and vegetable or added to soups. Serve accompanied by fresh steamed rice…..enjoy!
